I decided that I need to bake a test birthday cake for Smug-Baby. I know that I want to make something that is fairly healthy for her so she can actually play in and eat as much of it she feels like. I don't want a cake that is full of sugar and eggs and milk and more sugar and red die #40 and all the other crap that goes into a traditional birthday cake. So, I found this recipe for a frosting that people online thought was really great. So I set to work yesterday afternoon.

First you take some soy milk and put it into the food processor or blender. I used the food processor but would really recommend the blender as it got splatter-y!

Add dry soy milk powder and coconut flour

Pour in some Agave Nectar

Vanilla, or course!

Squeeze some lemon juice and add along with some coconut oil to the mix while the processor is running. I don't have pictures of this, because of the aforementioned splattering issues and not having more than two hands!

Because I am such a professional, when I was transferring the frosting to the bowl for chilling, the blade fell in causing more splattering!

Cover and stick in the fridge for 6 hours - that's right 6!

This will be Smug-Hub's contribution to this birthday cake - he just doesn't know it yet

For the cake, I found one online that was dairy, egg, gluten and sugar free. It is sweetened with dried prunes and Agave Nectar.

First, soak the prunes in some boiling water for about 10 minutes

They get nice and soft

 Pour them into the blender



Then add coconut oil, Agave, Apple Cider Vinegar and Vanilla and blend until thick and smooth



The dry ingredients are Brown Rice Flour, Tapioca Flour, Cocoa, Baking Soda and Salt.

Pour the wet into the dry and mix


Spray the pan with cooking spray

Fill the pan with the dough and bake for about 50 minutes until a toothpick inserted in the center comes out clean.

Let it cool for a few moments and turn it out to cool completely.

Here is the final product (without her name with I added later). I added cocoa powder to some of the icing for brown to use when writing her name and I used beet juice for the pink. I think that it looks OK, not great, but I'm far from a professional cake decorator!!

Here is the thing... it was horrible! The icing wasn't bad, but wasn't fab either. The cake wasn't sweet and was so dense and solid. It was just horrible. I ate about 3 bites and Smug-Hub only took one before we donated this cake to our hungry trash can.

So, now I am back to square one! I still want something that she can take part in, but maybe I need to go with something that is less "free". The brownies I made last week were amazing, but not sugar free. The German chocolate cake I made at Thanksgiving was incredible, but not sugar free or gluten free. The cupcakes Smug-Grandma and I made a month or so ago were really delicious but were made with white flour. So, it is back to the drawing board. If nothing else, I will make a traditional cake for all the guests and something like this that Smug-Baby can play with - she won't know that it is horrible... OK, even she would know that it was horrible :(
